Special Dinner 4 Special Friends:

Voted "BEST random, not thought out, use what ingredients you have" Award:

Artichoke Hearts, Sauteed Spinach, Yellow Peppers...


Rosemary, Garlic, Red Potatoes. Boiled, then baked.


I wanted "chicken parm" so I sub'd for baked tofu. No bread crumbs? No prob. I put "olive oil & cracked pepper triscuits" in the blender with italian seasoning, garlic powder, and a little olive oil and vwaa-lahh! BREAD CRUMBS! Bake "breaded" tofu until brown. Top with marinara sauce.


Garlic bread on side. Such a fantastic feast!!!! Only for my biggest cooking FANS!

Dinners:

Never argue at the dinner table, for the one who is not hungry always gets the best of the argument.

Below are some of my "go-to-fav's"


Any kind of pasta, add peas and other veggies its always a delicious combo


Stir fry. Grilled and sauteed tofu. Brushed with sesame oil,  garlic-chili paste, soy sauce. 
sauteed "asian-esq" veggies. (i.e. cabbage, peppers, onion, carrots, peas, etc...)


Baked potatoes are great with sauteed veggies and italian seasonings. This one in particular has finely chopped cauliflower, green beans, peas, peppers etc...


This baked potato I pureed spinach, garlic, onion, and green peppers with olive oil, and vegetable broth. Simmered in a shallow pan for about 10 min. Mixed peas in and poured over baked potato. On the side is buttered (dairy-free) garlic bread.


This I just called "Layered-Yum"



I layered brown rice, black beans mixed with salsa, veggies including; zucchini. Broken corn tortilla chips, and 3 slices of vegan pepper jack cheese. I baked it (uncovered) on 350 for until "cheese" looked" melted and golden brown.

Try this:


This was egg white salad. Hard boiled egg (whites only) pickle, onion, celery, salt & pep, crushed red peps, olive oil mayo, reg. yellow and spicy mustard. Chopped/processed in mini food processor. Spread onto toasted poppy seed bagel. 


Grilled cheezy tofuy. White bread (buttered on both sides) is tastiest. Grilled tofu brushed with italian dressing and sriatcha. Vegan cheddar slice. Pressed in a panini press.

Breakfasts:

They say...Breakfast is the most important meal of the day.

Here are some of my yummy breakfasts:


This is scrambled egg whites with tomatoes & red pepper and garlic and italian seasoning.


This is my sweet peach oatmeal. I used frozen peaches, cinnamon, and coconut sugar in my mini food processor. Then added it to the boiling water and whole rolled oats.


Egg Burrito. Spinach, peppers onion, and "sriracha". Sauteed with seasoning stuffed into a gluten-free tortilla and topped with HOT salsa.

Happy "Tofurkey" Day!!!

I brought Thanksgiving dinner to my fam's house
so I could participate in the festivities with out
eating actual turkey AND butter...Here's the break down:

I sauteed fresh green beans in EVOO and fresh garlic 
(LOTS of garlic! It's fine I'll sweat it out at yoga and people
 around me will wonder what smells like "yummy dinner" 
no big deal guys its just my natural smell...haha)
and sea salt and pepper.

Mmmm...mashed potatoes! Sans butter and milk. 
I replaced those items with plain unsweetened soy milk,
"tofuti" brand cream cheese, and smart balance LIGHT butter spread
(the "light" is dairy free, regular smart balance is not!)
I added herbs such as; rosemary, thyme, and basil, salt & pep of course.

This brand www.quorn.us/home is great! They make good vegan 
"fake meats" that have great texture and didn't dry out. 
(usually sold at whole foods and sprouts)

I baked it on 425 for about 45-50 min. in a pan full of 
diced red apples, jalapenos, shredded carrots, yellow onion, 
and low-sodium vegetable broth. No seasoning necessary. 
It had enough flavor on its own. So good!

Here's the finished product in my very own RECYCLED 
to-go container (from pei-wei!)

I used the left over vegetable broth as a "gravy" over the potatoes.
It was just the right amount of sweet&spicey from the apples and jalapenos!

For desert (because pumpkin cheesecake, 
that Grandma brought would be the death of me!
 Even though it looked and sounded like heaven...)

I cut up some fresh strawberries and added honey, 
brown sugar & cinnamon, 
and a dash of chili powder...yes chili powder. It was amazing!

Breakfast: Scrambled egg whites with S&P (salt and pepper)
Tapitio hot sauce, with sauteed spinach, peas,
diced peppers, onion, jalapeno, yellow squash, fresh garlic,
S&P, EVOO, italian seasoning
I'm trying "gluten free" bread. Its ok, kinda bland. 
It's made from brown rice flour...was good as toast.

Yum...Food.

Breakfast: Whole wheat waffles
Sauteed tofu with cinnamon,
honey, chili powder, cocoa powder, EVOO (olive oil)
Fresh sliced strawberries.
It smelled and tasted like french toast...

Late Night Snack: Grilled Cheeeez
Whole wheat bread,
Sauteed spinach, green peppers, and onion
Tofuti brand american "cheez"
Pressed in a panini press.

Always have hot sauce on hand. 
You never know where you'll end up,
 and what you'll need to make spicy.

Dinner: Mush-Soup
Quinoa, Peppers, Onion, Adzuki beans, Kidney beans,
Roasted corn (from a Cobb), Peas, Carrots, Sliced yellow squash,
Sliced sweet potato, Vegetable broth, Garlic(x2), Sea salt, Pepper, 
Chili powder, Basil, White wine.
Thinly sliced tofu marinated in EVOO & garlic pepper. Grilled and placed on top.
